I think some people in schools have way to much time on there hands

I was reading a story on CNN about a boy having to change his hair cut to fit school's policy. I may not agree with the point of the hair style. I do think there is a better way to spend time with students. Pay teachers more!!!!

01/06/2009 Not really alot of answers, but alot more questions

As you know we have been dealing with Wilson's medical issues for sometime now. Yesterday we had a buffet of doctor visits. We went to GI specialist who Dawn says is pretty high on the food chain. I don't know how he gave us hope and crushed us all in the some time. He believes there is something wrong with Wilson but doesn't think he has EE. So then he is sending us to an allergist. Dawn said he is a world renowned allergist. I mean with a child that has 14 food allergies, you might want the best. Just saying. Then we saw a speech pathologist. She was such a nice doctor, but no definite answers, just more questions. After that we saw another doctor, she was a dietician. Let just say she was no help. I am going to be honest, and say to me it was a waste of time. The Robling family had there fill of doctors that day. Also it was noon, Wilson’s nap time, and we were in a room with 35 square feet. So if anybody has seen a Wilson melt down, this was a classic one.

So when left the hospital, we kind of stand in the same place as we started. The only difference is that we have the top doctors in there fields. It really sucks some times going threw this. I mean Dawn deals with the doctors 100 times more then I do. I just deal with the monster. You know there is something wrong with your child and there is nothing you can do to fix it. I mean there is something inputted in our DNA the moment you know of your child to protect it. I am normally a person that just deals with things as the come along. It drives Dawn nuts, but that’s who I am. If there is something wrong, I just roll with it. This is something I don’t think I can roll with.


If one more person say’s God is only going to give you stuff that you can handle. I hate that phrase. I have said that phrase. Do I really believe it? Sort of but I really hate that phrase. I think Christians use it before actually thinking it. It is like an instant opening your mouth response before thinking. Trust I am king of this category. I trust God is taking in us on this messy journey. Well in my mind it is messy. I know that he does things for a reason. I am not sure why. I don’t think it is that we don’t pray enough or read that bible enough. God just has a weird way of doing things. We go to Crossroads, and everybody knows that a member passed away during a Christmas play. This was a terrible situation we people lost somebody. Yet God brought people closer to him through it. I don’t know where he is going with this, or even where we are going. All I can say is that I would just like answers. I know I was talking to Scott on how blogs become bitchy and depressing. So I do apologize for this one. I just had to get something off my chest.

Dinner

Ok well if you’re craving some Mexican I can give you recipe to my homemade fajitas. You will need only a few things.

1 to 2 pounds of chicken breast.

Wilson approved tortillas

1 sweet white onion

1 yellow pepper

1 orange pepper. (I use these peppers because there sweeter then the traditional green and reds)

Olive oil

3 large limes

Bottle of at least Jose Cuervo tequila (you wont use the whole bottle and yes I feed this to Wilson, the alcohol cooks off before it is served)

Chicken seasoning (I like the McCormick’s kind)

Some zip lock bags

Prep

Slice the chicken into strips the size of high lighters (yes I am at my desk and looking at a high lighter there the same size so come work with me)

Sprinkle the chicken with the seasoning and slap the seasoning into the meat, and place in the bag.

Slice one lime and juice it into the bag (note put the lime in the microwave for 10 seconds to release the juice if you hands are not strong) leave the remaining limes in the bag as well

Then add a splash to tequila, only use a small amount. Push the air out of the bag and place in the fridge so the flavors and mix.

Slice the peppers and onions about the size of a sharpie (remember I am at my desk)

In separate bags add onions and olive oil in one, and in the other peppers and tequila in other.

Let the bags sit for about an hour or so.

If you’re feeling adventuress you can grill these, if I do you the grill I put a piece of foil down for my veggies

Pull the bags out of the fridge and place in a hot pan. All at once if the pan is a not stick remember to Pam it.

Please cook the chicken all the way through, if not you wont feel good later on.

Cook the veggies to your liking,

When your done cooking remove the lime rhine and place in a large dish. And squeeze one last lime over the food and your good to go.

You can add lettuce, salsa, beans, and even rice to this to jazz it up.

Some of the things you may not like, but this an open recipe you can play with.

Wilson Approved Dinner

Pasta

1 box of noodles (make sure that there are no eggs, and milk used)
1 can of crushed tomatoes
1 can of diced tomatoes
1 can of tomato paste
4 table spoons of minced garlic
1 package of sweet italian sausage
olive oil
basil
oregano
parsley
salt
pepper

Start

Noodles
Boil Water- add a pinch of salt and table spoon of olive oil to the water
when the water is at a good boil then add the pasta

While the water is boiling open the cans of tomatoes. (when you open the diced tomatoes drain the juice in the can) add all three cans in a pot.
add 1 table spoon of basil, parsley, and oregano. Also stir in 1 tablespoon of minced garlic. Salt and pepper to taste.

While the sauce is simmering remove the sausage from it's casing and add to a frying pan. Mix 1 table spoon of garlic while cooking.

When the sausage is brown, drain the fat and add it to the sauce.

When the noodles are done remove from water and put back in the hot pan to finish off the water. Dump the sauce and on the noodles and mix.
